So... how to fix that? Three words: Fine. Grit. Sandpaper.
I use 800-grit sandpaper to scrub the wax off the washed apples right before coating with caramel, and the rough texture of the apple peel helps the caramel adhere to the apple. In fact, using this method, I have never had a problem with the caramel trying to slide off the apple even at room temperature or before refrigerating. It also works with more traditional candy coatings on apples, not just caramel coating. It's a real game changer!
